Hi Everyone
We are frequently asked questions about knives so I am going to give you all some FAQ's.  I always ask my customers when was the last time that you had your knives sharpened.  The top two responses are 1). Never and 2) When I got married (because someone gave them a block of knives as a wedding gift).  I am going to give you our opinions on some of the most asked questions about knives, so here we go.

1).  How often should I get my knives sharpened?  If you like to cook, I recommend the knives that are being used on a daily basis should be sharpened once a quarter.  The others once a year or when you feel they need it.

2).  Are dull knives more dangerous than sharp knives?  Absolutely!!!  More pressure must be applied to cut an item when the knife is dull. More times than not, one will find that the hands and/or items that one is trying to cut could be wet therefore this is where the slippage comes in and the knife glances off to give one a minor injury.  Sharp knives requires less pressure.

3).  Should I wash my knives in the dishwasher?  No.  Most knives can't take the extremes from going to hot then to cold.  Then cold back to hot.  This causes stress to the plastic where one will find pieces of the plastic handles breaking off.  The water also bangs the knives around in the dishwasher then the cutting edge will come in contact with other items.  Once the cutting edge hits something it will start to dull the knife. It is far easier to wash the knife off, dry it then stow it away.  This can be done in 10 seconds or less. Just wash the knives.

4).  What should I look for when picking out a knife to purchase?  I always recommend holding the knife and see how it feels in the hand.  The handle should feel very comfortable.  Once you try holding different knives you will also find that many knives have different weights and are balanced differently.  Find the one that fits comfortably and well balanced because the knife is the extension of your art work.

5).  What brands do I recommend for a kitchen knife?  There is a huge selection of knives to choose from.  One must first decide what type of budget do I want to spend then go from there.  I will list several brands that I like because they take a good edge and hold there sharpness.  This is in no particular order. Wusthof Classic, Double man Henkel, Shun, Global, Bob Kramer, Porsche and Victorinox.  There are others out there too.  I am just listing some of the most common ones.
